The entry on songwriter Rivers Cuomo's Grand File for "Acapulco" lists it next to the date March 31, 2001, with the accompanying schedule note: "WENT TO puerta vallarta with kelley."

"Acapulco" is first known to have been demoed as an instrumental on May 27, 2001 at Monster Island Studios in Washington, D.C. during a stop on the band's Hooptie Tour in support of the Green Album. It was later revisited with vocals, at Cello Studios during the recording sessions for the band's fourth album, Maladroit. After failing to make the cut for that album, it was revisited again in July of 2002 during early recording sessions for the band's then-planned fifth album. Demos from all three of the aforementioned sessions were released as MP3s on the band's official site.
